Perfecting Pumpkin Pie

When the first day of Fall appeared at the end of September, I was so ready to start getting in the mindset šŸ™‚ Just to be clear, I am NOT a pumpkin spice girl. at all. BUT I do enjoy carving pumpkins as well as eating pumpkin pie. I suggested to Nathan that we pick out some pumpkins to carve in the evening – however, the grocery store we went to only had MASSIVE ones or smallĀ ones. Rather than giving up on the idea, I suggested that we make a pumpkin pie! How hard could it be?

Nathan quickly looked up a recipe (CLICK FOR THE LINK) on his phone, so we would know what ingredients to buy. We needed: a pumpkin, eggs, brown sugar, cinnamon, evaporated milk, ginger, nutmeg, and salt (we already had most of the spices in our cupboard!). We also went for a frozen pie crust – after watching enough “Great British Bake Off,” we knew how tricky it is to make from scratch šŸ˜®

We boiled the pumpkin, once chopped and cleaned, and then got rid of the skin. Then, everything was beat together and put into the crust! The first pie we made was watery after the allotted time, so we left it in for much longer. HOWEVER, the pie crust kept burning and when we covered it with tin foil, the pumpkin mixture did not fully cook.

We still had more pumpkin and spices, which meant we could make another pie šŸ™‚

They were both delicious!
