FIRST OFF: Tomorrow is the halfway point of me blogging every day this year!!

What do you get from breadcrumbs, flour, cauliflower, and a mix of other veggies?

Delicious homemade veggie patties 😮

I blitzed cauliflower, carrots, onion, tomato, and lettuce grown from our garden (!) in the food processor until they were finer than diced.

Stirred until it was combined, and then added 1/4 cup of both breadcrumbs and flour. I bought this scrumptious dressing made with almond butter, turmeric, ginger, and lemon juice that I added 1/4 cup of to the mixture.

Then it was time to make patties and chill in the fridge!

I got this idea from cooking recipe dinners for my nannying job – they have a company called Green Chef send them prepped ingredients and recipes. Many of the ones I have made were versions of veggie patties. I took one of the recipes home with me to know the correct amount of flour and breadcrumbs versus dressing to add 🙂

I had the cauliflower, tomato, and onion in the fridge already and they needed to be cooked soon so I thought they would be perfect for this patty. I know that cauliflower works blitzed up since I have made cauliflower couscous before.

We left the shaped patties chilling for about ten minutes to get them well bound, and then fried each side on medium heat for about 6-8 minutes.

We added some wild rice and more dressing on the top. They were so flavorful from the veggies!

Leftovers were just as good today 😀
